Aprendiz Mezcal

Aprendiz Mezcal Artesanal was created for aspiring mezcal connoisseurs and curious beings wishing to embark on the journey of traditional agave spirits. It is the perfect all-around mezcal, easy on the palate with a hint of sweet smoke, herbal notes, and a deep roasted agave finish. Produced by Isaías Martinez and his family, this hand-crafted spirit is distilled from 100% agave Espadín in San Juan del Rio, Oaxaca. Full-bodied and smooth, Aprendiz is ideal for those looking to embark on a mystical mezcal journey or design a creative cocktail.


In 2003, the Pescador de Sueños found himself confronted by an imposing Espadín growing in the supreme conditions of San Juan del Río, a semi-dry, seasonally dry forest nearly 4,000 feet above sea level. Throughout this dream-like encounter, the Pescador bonded with Isaías and his family who have been producing traditional mezcal for over three generations and who respect the gusto historico, (socio-historical taste), the land, and the culture.


*Artesanal Production Process: Carefully harvested and sheared by hand, Espadín agaves (A. Angustifolia) are roasted in an earthen pit; crushed on a Tohona stone mill powered by mule; fermented with local spring water and wild mountain yeast; then double distilled in a third generation copper alembic still.


Agave Sustainability: Our goal is to annually reforest more than 120 acres of wild agaves endemic to Oaxaca by seed propagation. This method is best for strengthening the genetic diversity of agaves. We apply sustainable farming methods to prevent soil erosion and allow for at least five percent of plants to mature and blossom so they can be pollinated and reproduce naturally.
